I\u2019ve been slow to update recently due to a series of business trips.<\/p>\n\n\n\n

From October 21 to 24, I traveled to Korea and would like to share a report on that trip!<\/p>\n\n\n\n

The purpose of this visit was to deliver an invited lecture at the 20th Anniversary Meeting of the Korean Mushroom Society. It was my first time giving an invited lecture, and although I was quite nervous, I successfully completed my presentation. I spoke about mycelium pulp, a topic based on research I submitted to ACS<\/em> and on technology for which we filed a patent during my time at Shinshu University.<\/p>\n\n\n\n

It\u2019s been about six months since I transferred to the University of Miyazaki, and I\u2019m finally getting used to the new environment. I feel ready to start experiments again soon. Progress on this research has been slow, but I\u2019m determined to move forward from here!<\/p>\n\n\n\n

I had the opportunity to exchange information with Korean researchers about mycelium-based materials, and I was impressed by how much more advanced their research seemed compared to Japan. We definitely have to step up our game!<\/p>\n\n\n\n

And of course, here\u2019s the usual food report.
On the last day, Professor Shin from Chosun University kindly gave me a tour of Seoul.<\/p>\n\n\n\n

We had authentic naengmyeon<\/em> (cold noodles) at one of the top three naengmyeon<\/em> restaurants in Korea!
I learned that in Korea, there are generally two types of noodles: one is thicker and softer, and the other is thinner and chewier. What I had was the former.
The broth had a perfectly balanced saltiness with a deep beef flavor \u2014 truly an unforgettable taste!

During the tour, we also had the chance to exchange ideas about our research.
We spent time with professors from Kyoto University as well.
It feels like a Japan-Korea research network on mycelium materials is gradually taking shape! (^^)<\/p>\n\n\n\n

I hope to continue building international collaborations in the future.
