発酵デパートメントに行ってきました I visited Fermentation Department.

研究打ち合わせで日帰り東京へ🚃打ち合わせが午後だったので前から行きたかった下北沢の「発酵デパートメント」へ!

発酵デザイナーで「発酵文化人類学」の著者、小倉ヒラクさんがオーナーのお店。色々な発酵食品に出会えます。ずっと行きたかったので感無量。

まずは、七福定食えちごをいただきました。美味♥なんだか米が美味い!雪室で保管したお米だそうです。何故美味しいの?鮮度が保たれている🤔?

A quick day trip to Tokyo for a research meeting 🚃
Since my meeting was scheduled in the afternoon, I finally had the chance to visit Fermentation Department in Shimokitazawa—a place I’ve been wanting to go for ages!

The shop is owned by fermentation designer Hiraku Ogura, author of Fermentation Culture Anthropology, and it’s full of unique fermented foods. I was honestly thrilled to finally be there.

To start off, I tried the Shichifuku Set Meal (Echigo). Absolutely delicious ♥ And the rice—oh, the rice was something special! It turns out it was stored in a yukimuro (snow room). Maybe that’s why it tasted so fresh and flavorful? 🤔

Such a lovely surprise—it made the visit even more memorable!


そして、そっと目をやるとそこにはコンブチャが!これが噂のSCOBYか(主にバクテリアセルロース)!初コンブチャ!

And then, just a little glance to the side… there it was: Kombucha! So this is the famous SCOBY (mainly bacterial cellulose) I’d heard so much about!
My very first encounter with real kombucha—what a moment! 🍹✨


甘酸っぱくてシュワシュワで美味しい!そして、ほんのり酢酸菌(?)の香りが(笑)培養したことある人にはわかるあれです。コンブチャは酢酸菌と酵母の共培養によって得られる発酵ドリンク。んーちょっぴり不思議だけど気になるでしょう?⚠昆布茶ではありません。

コンブチャ職人、ケルン フェリックスさん(スイスご出身)@orchard_spring がいらしたので少しトーキングを。そして、なんと、スターター液を分与いただきました!これで私もコンブチャDYIデビューです。

Sweet, tangy, fizzy, and delicious—yet with that subtle vinegar-bacteria aroma (those who’ve ever tried culturing will know exactly what I mean, haha). Kombucha is a fermented drink created through the co-culture of acetic acid bacteria and yeast. A little mysterious, maybe even suspicious at first glance, but definitely intriguing! ⚠ And no, it’s not kombu-cha (kelp tea).

I even had the chance to chat with Felix Koelln-san, a kombucha artisan from Switzerland, known as @orchard_spring
. To my surprise, he kindly shared some starter liquid with me! Now I’m officially ready to kick off my DIY kombucha journey. 🍶✨

そしてこちらが、ケルンさんの名刺入れ。お気づきになられたでしょうか。そうです。コンブチャの気液界面にできる、バクテリアセルロース(コンブチャ界隈では、SCOBYというわれる)で作ったもの。いわゆるビーガンレザーです。
乾燥すると縮むらしく、伸ばすのが大変だったよ~とおっしゃっていました。

And here it is—Felix-san’s business card holder. Did you notice?
Yes, it’s made from bacterial cellulose formed at the liquid–air interface of kombucha—what the community calls a SCOBY. In other words, it’s vegan leather.

He mentioned that once dried, the material tends to shrink, so stretching it into shape was quite a challenge. Such a fascinating example of how fermentation can turn into design!

そして、探し求めていた長野の珍発酵食品「すんき」をゲット!シーズンもののお漬物で夏場のネット通販は全て売り切れ、諦めていたので小躍りしました。

早速次の日の朝ごはんでいただきました。すんきは塩を使わない、乳酸菌の発酵を活かしたお漬物です。さっぱりとした酸味がありつつも不思議なまろやかな旨味があり、ペロッとなくなってしまいました。

植物性の食べ物には含まれないと言われている、シジミの旨味成分、コハク酸が含まれるそう。ちょっと特殊な乳酸菌たちが頑張っているみたいです。塩分が低いのがポイントとのこと。

あー毎日食べたい!おそらく12月頃から出回るとみています。これは毎年のマストバイアイテムです。

At last, I found it—the rare fermented food from Nagano I’d been searching for: “Sunki”!
It’s a seasonal pickle, and since summer online shops were already sold out, I had almost given up. You can imagine my joy—I practically did a little dance when I spotted it.

The very next morning I enjoyed it with breakfast. Sunki is a unique pickle made without salt, relying solely on lactic acid fermentation. It has a refreshing tang yet also a mellow, savory depth that’s hard to describe—it disappeared from my plate in no time.

What’s fascinating is that it even contains succinic acid, an umami component usually associated with clams, not plants. Apparently, some rather special lactic acid bacteria are hard at work here. And with such low salt content, it’s both distinctive and healthy.

Ahh, I could eat this every day! I expect it will start appearing in markets around December, and for me it’s definitely a must-buy item every year.

自宅にて、ケルンさんからいただいた、コンブチャのスターター液の培養を仕込みました。コンブチャは紅茶とお砂糖で酢酸菌と酵母を共培養するものらしいです。

一般的なお茶じゃつまらねぇ!
ということで、昔、フィンランドのお土産でもらった、チャーガというキノコとブルーベリーの紅茶があったのでそれを使用。ファンシーな黄色だったスターター液は茶色の液体に飲み込まれました。

室温で発酵させるそうなので、しばし待ちましょう。経過は後日レポートします。その際にコンブチャについてもちゃんと説明します。

September 14, 2025 – At home
Today I set up my very first kombucha brew using the starter liquid Felix-san kindly shared with me. Kombucha, as I’ve learned, is essentially a co-culture of acetic acid bacteria and yeast that ferments tea with sugar.

But hey, brewing with ordinary tea felt a little too boring!
So I decided to use a special tea I had kept as a gift from Finland—a blend of chaga mushroom and blueberry. The fancy golden color of the starter liquid was quickly swallowed up, turning into a deep brown infusion.

Since kombucha ferments best at room temperature, I’ll leave it to do its magic for a while. Stay tuned—I’ll report back on the progress later, and also share a proper explanation about kombucha itself. 🍹✨
